Below is a new list and description of classes to be held in the PinkGinger kitchen from Jan – June 2012. New class themes have been added and there are also some repeat classes due to popular demand.

JANUARY 2012


Monday 16 January                          7.00pm - 10.00pm

Avoca Favourites - Part 1 (Can be booked individually)

As always, classic Avoca recipes are a popular addition to your everyday repertoire in the kitchen. Dishes enjoyed today will be some of the most popular, Beef in Guinness, Fishcakes, Chicken and Broccoli Crumble, ‘the best Apple Tart’, Creamy French Dressing and more. Eat ‘Avoca’ at home every day in the knowledge that you are giving the best to your family and friends.

MidWeek Suppers

Eimer's favourite midweek suppers, which can all be prepared quickly, with minimum preparation, but maximum flavour. Among the recipes today will be a soup packed with a punch, accompanied by a stirfry with the goodness of seasonal influences, a casserole style dish, and a quick ham and leek tart.

Dinner Party Fish Dishes

Fish Dishes which are suitable for dinner party gatherings. Seabass and Coconut curry, lightly spiced scallops, buttered coconut prawns, Roasted Cod with light tomato and chickpea sauce. All to be enjoyed – easily mastered and packed with flavour.

Stylish Thai and Indian

A wonderful array of Indian and Thai influenced dishes, using various spices to create soups, stirfrys and curries. Spices, chilli, lemongrass and curry leaves are just some of the aromatic influences here. Chicken , Fish and beef...something for everyone as a great deal of these spiced dishes can be adapted to other meats.

FEBRUARY 2012

Wednesday 1 February                          7.00pm - 10.00pm

Men in the Kitchen

Here, Eimer will choose a starter, two mains and a dessert (with extras) which can be adapted for everyday cooking or dinner party treats. There will be fish, chicken and a meat included, and one of the dishes will be casserole based. To balance this, there will be a little emphasis on how to present the dishes for maximum impact... when required!

Remember 14 February is fast approaching....for that special someone...

Cakes and Bake...Sweet Treats!

Chocolate, flour, Lemon, Citrus and Vanilla! Just some of the natural flavours we will be introducing to tarts, cakes and biscuits. These will be all new recipes – all of which will be new recipes to the PinkGinger sweet treats. There will as always be a savoury treat to balance our tastebuds.

EveryDay Fish

Scrumptious dishes fish dishes for everyday family eating. Some will require a little work, some will be incredibly quick to prepare. Fish should be part of everyday cooking and eating – as it is very versatile and packed with natural nutrients.

A selection of Avoca Favourites – but slightly lighter and less well known that those featured on 16 January. However Eimer will include a couple of classics, Pepper pot Beef and Pear and Frangipane Tart....just so as to include some Avoca classics.

Nutritious Soups and Mains

Fulfilling the demand for warming dishes which are full of nutrition. Packed with elements of spice, herbs and lovingly cooked ingredients to create dishes which are guilt free and a joy to eat. A mix of soups and mains.

Wednesday 15 February                          7.00pm - 10.00pm

Thai and Indian

Flavours of Indian and Thailand – light and full of depth of flavour. Mains and side dishes, Baked lemongrass infused rice, lemon and coriander potatoes, all to accompany fish and meat main dishes. Also a spice infused dessert to round off the evening.

Winter Warmers

A capsule selection of dishes, nutritious, tasty but also quick and easy to prepare. Full of warmth and comfort, easy to create and family favourites.

Cooking for Gatherings

Confirmations, Christenings and communications...dishes here to prepare in advance, which will appeal to all tastes and allow for fuss free catering for groups. The dishes here will require some preparation in advance – but all worth the effort.

Mad Dash – Quick Fix Dinners!

This is a busy time of the year and it is imperative that we have interesting, creative dishes which we can prepare without spending too much time in the kitchen. Some can be prepared in advance and others are last minute cooking – all the flavour with minimum fuss.

MASTER BAKER – DANNY SMITH
Once again PinkGinger is delighted to welcome Danny Smith, ex head Baker in Avoca (13 Years). Max 9 persons attending.

Due to the success of Danny’s last visit to PinkGinger, he is returning to share with us his experience and to demonstrate the techniques and secrets of achieving perfectly light yeast bread, the perfect soda bread, a sweet treat and lots more. Power of Yeast mixed with the understanding of different flours creating varying interesting textures.

GUEST CHEF..Sunil Ghai, Executive Head Chef, Ananda and Jaiphur restaurants

Once again, PinkGinger is delighted to welcome Sunil Ghai to share his knowledge and experience, delighting us with the secrets using wonderful aromatic spices, in various guises. Sunil, who has been voted 'Food and Wines 'Chef of the Year and has won many accolades (also featured on masterchef) will prepare and cook starters, mains and sides, fish and meat dishes - a uniquely intimate experience. Come and enjoy.

One Dish Dinners

This speaks for itself. One Dish means less washing up! Here we will use warming dishes using some wonderful ingredients coming into season, all of which will be available in abundance in the months ahead. Again, varied ingredients mean that there will be something for everyone.

Thursday 8 March                          7.00pm - 10.00pm

Vegetables and Pulses with attitude

Scrumptious dishes which may be served as a main course or as a side dish. Or you may if you wish add a little meat if desired....for those who insist! Fresh Beetroot Dip with spices, Chickpea, lemon and chilli fritters, Chilli Bean Cassoulet, Courgette and cumin spiced pancakes toasted goats cheese....amazing flavours with wonderful ingredients.

Sensational Savoury and Sweet Tarts

A wonderful selection of Tarts, using puff pastry, shortcrust and pate sucre pastries. Some familiar names, lemon citrus tart, pecan tart but also the slightly unusal bean, pepper and chilli tart with crème fraiche topping, vegetable and sliced roast potato tart. All great recipes – which you can adapt with other wonderful flavours, cheeses or vegetables (where appropriate).

Cooking with Irish influences.....also perfect for Mothers Day entertaining

Lamb with mint, boxty potato cakes with apple and beetroot relish, seafood chowder with Guinness bread, Beef in Guinness (or similar), Loin of Bacon with Irish whiskey sauce. Plenty of familiar dishes here, but with an elegant twist. Perfect to help celebrate St Patricks Day with family friends.


Tuesday 20 March                          7.00pm - 10.00pm

Thai and Indian

All new spice influenced dishes here. Main courses with fish, duck and meat, lentils and rice. We will also include a traditional Thai curry – with homemade paste which can be prepared in advance.

Monday 26 March                          7.00pm - 10.00pm

Popular Traditional Dishes

The dishes we all rely on: Shepherds pie, the best thyme and lemon Roast Chicken, Beef Stroganoff, Chilli Con Carne and Bread and Butter Pudding. All terrific family favourites...done well!

Wednesday 28 March                          7.00pm - 10.00pm

Quick Midweek Suppers

Quick Tasty Dishes for maximum flavour with minimum fuss. A simple Frittata, a tasty cassoulet, a wholesome soup, and a fiery curry. We will also include a sweet treat – to satisfy our tastebuds!

Classic Cakes and Bake

Back to the very first Cakes and Bake class at PinkGinger. Here we work on wonderful recipes for light sponges, a chocolate cake, Pastry with a classic tart, perhaps a Citrus Lemon, and a quick meringue. We will of course include scones – all the best classic recipes – for you to master.

Dinner Party Recipes

Everyone can entertain in style and here, Eimer will share her recipes which are guaranteed to impress, but will allow you to be organised in advance. One dish may require a little work last minute – but Eimer will create a menu where you can prepare most of the dishes in advance. One starter, two main courses and a delicious dessert – and of course some little extras which add a little sparkle to your evening.

All New Thai and Indian

At PinkGinger we love to use spices to add interest and a little creativity to dishes. Here we will use lemongrass, chilli, coriander and cumin in abundance, and lots, lots more. Fish and meat dishes with lentils and sides.....Come and explore your tastebuds.

Light Fish and Chicken Dishes

As the days are getting longer and we feel a little warmth, it is lovely to change our foods with the seasons. This class is all about eating lighter, seasonal meals, but quick to prepare and perfect for the months ahead. Chicken and fish will be the focus here.

Cooking for Friends

Gatherings of friends and family and the enjoyment of food together is always a recipe for creating great memories. Today we will create a savoury tart, casual but tasty one pot (or platter) dishes, some dips (try spiced bean and pea, spicey beetroot, sundried tomato pesto...and more. Food for fun!

One Pot Seasonal dishes

These are one pot – usually quick to prepared dishes – where the ingredients used will be light, and of course seasonal. Sweet Tomatoes, basil, watercress, fruits such as mangoes etc, will be used in savoury dishes to maximum affect. Some dishes may take a little assembly – other will literally be in one pot or quick to prepare tart. Suitable for both everyday cooking or entertaining.

Italian Influence at PinkGinger

Pizzas, bases and toppings, polenta rosemary chips, piedmontese peppers. Risotto, lemon polenta cake or Tiramisu ...and lots more. Enjoy your own Italian affair....with food.

Men on Hot Coals

This one is only for the men!....Marinades, steaks, burgers, chicken and fish, salsa and sides. What more is there to say......wonderfully summery aromas created using the best ingredients for your BBQ....and to accompany your BBQ creations.

Sizzling BBQ Delights

Once again, wonderful ways to prepare meat, fish and chicken, whether marinated or quickly seasoned and accompanied by light dressings, salads and sides. If outdoor entertaining is what you cherish – then this class covers all.

Sensational Seasonal Salads

The dishes here are suitable for main courses during the warm summer months. They will be quite substantial, including noodles, pasta, cheeses, meats and fish. Some will be Avoca favourites, some PinkGinger favourites...sunshine flavours!

Berry Summer Sweet Treats!

Summer Berry Tarts, Citrus influences and Icecream. Lots here to enjoy over the summer months. Also included will be smoothies, berry summer fruit jelly, Vanilla, lime and Mascarpone Tart with pate sucre. Hungry anyone?

Summer Entertaining

How to entertain in style over the warm summer months. A combination of meat and fish dishes, salads and BBQ style dishes – but with a little flair. Also included will be a suitable, ‘prepare in advance’ light fruity dessert.

Light Summer Chicken and Fish Dishes

The Best of Avoca Summer dishes –and some of Eimer’s favourites. These are the classic dishes that will get you through the Summer months, Layered Tuscan and goats cheese Tart, Piperade Tart, Cous Cous, a host of marinades for chicken with roasted cherry tomatoes, Parmesan Italian chicken...and more! Come and enjoy.

CLASS PRICE RANGE:

€75.00 per class per person
€140.00 for two classes
€200.00 for three classes per person
If a person chooses to attend a fourth class or more, the cost of each class will be €65.00
GROUP BOOKINGS:  €65.00 per person based on eight persons per group
Anyone who has attended a group booking may attend any individual class for €65.00 thereafter.

 

GROUP BOOKINGS at PINKGINGER Supper Club

Here a group of eight persons can choose a themed menu specifically tailored to suit their needs.  Having learnt how to create wonderful vibrant food, they will then sit back, feast and enjoy the wonderful food prepared with a glass of wine.

Supper Club price €65.00 per person.
